  • Passion Fruit, pitted 100.0 g
  • Raspberries, halves 50.0 g
  • Orange, segments 50.0 g
  • Grapefruit, segments 50.0 g
  • Lime, sliced 10.0 g
  • Kiwi, diced 20.0 g
  • Orange Zest 2.0 g

Preparation

  1. Cheese Base

    • Mix all the ingredients together.
    • Set aside.
  2. Whipped Cream

    • Mix all the ingredient together.
    • Whip to medium hard peak.
  3. Fruit Tea Base

    • Mix well all the ingredients and set aside.
  4. Cheese “Cap”

    • Fold in both ingredients (200g of cheese base, 200g of whipped cream) and set aside.
  5. Garnish and Condiments

    • Prepare ingredients as mentioned above.
  6. Before Serving

    • Plate, assemble, garnish and serve.
