Preparation

  1. Preparing the Sticky Rice

    • Wrap in wet cloth, steam for 10 mins
  2. Preparing the Oceanic Treasure Condiment

    • Soak glutinous rice overnight. Strain before putting soaked rice to steam for 10 minutes.
    • In a separate pot, stir fry aromatic, add in smoked ham and mushroom. After that add scallop, oyster and abalone and continue to stir fry.
    • Deglaze with Chinese wine. Add in all other seasonings, water and steamed glutinous rice. Remove from heat, stir fry to mix well till all ingredients evenly incorporated. Set aside to cool.
  3. Serving the Oceanic Treasure Sticky Rice

    • Measure 300g of the sticky rice and shape to an evenly shape. Wrap it with nori sheet. Place a piece of Shiso on both sides.
    • Wrap with cling wrap, second wrap with Aluminium foil. And steam it for 45 minutes.
    • Deep fry enoki coated with corn starch and garnish over sticky rice.
    • Ready to serve.
