Cordyceps Flower Chicken Soup Base with Ginseng

  • 1500 Ml Base Stock, From Above
  • Fresh Chicken, diced and blanched 400.0 g
  • Shark Fin Melon, deseed and diced 400.0 g
  • Cordyceps flowers 5.0 g
  • Ginseng 2.5 g
  • Red Dates 30.0 g
  • Dried Scallops 10.0 g
  • Goji Berries 10.0 g

Preparation

  1. Base Stock for Cordyceps flower soup

    • Bring water to boil, add in all seasoning. Ready to use.
  2. Cordyceps Flower Chicken Soup Base with Ginseng

    • In a pot, add all the ingredients —  chicken, shark fin melon, cordyceps flowers, ginseng, red dates — and bring to boil.
    • Simmer for 30mins.  
    • Serve aromatic and comforting cordyceps flower soup.
  3. (Optional) Tips

    • Remove the skin from the chicken if you do not want a layer of oil in your cordyceps flower soup. Alternatively, you can use a fine mesh strainer to remove the layer of oil.
    • Add cooking wine to the cordyceps flower soup base stock if you'd like to make the chicken tender. However, be careful not to add too much cooking wine as it will ruin the taste.
